About the Producers
Sebastian Ramirez is a fourth- generation coffee farmer with over 12 years of experience. Sebastian began as a traditional grower but eventually delved into fermentations and made connections within the industry. Nowadays, he is a master in carbonic maceration, coffee profiles, and varietals. We are honored to represent him and can confidently say that his coffees are anything but ordinary. This coffee is a Pink Bourbon, a hybrid of Yellow and Red Bourbon where the cherry grows with a pink hue. It is known for its juicy body and complex, fruit-forward flavor.
What makes this coffee stand out
Pink Bourbon is a rare and highly sought-after coffee variety celebrated for its complex, fruit-forward flavor profile with notes of pink grapefruit, stone fruit, and florals. Originally thought to be a hybrid of Red and Yellow Bourbon, recent genetic testing reveals it is actually an Ethiopian landrace variety, likely introduced to Colombia through unknown means. The varietal is named for its distinctive pink-ripening cherries, which require careful harvesting. Pink Bourbon is prized for its elegant cup quality, bright acidity, and silky mouthfeel. It is rare due to its low yield and being particularly difficult to grow.
My husband and I have been Driftaway subscribers for a while and have had some truly excellent coffees, but this Pink Bourbon from Sebastian Ramirez is one of the best we've received. After a few days of brewing, we keep coming back to how beautifully balanced it is - the fruit-forward flavor is complex and vibrant without being overwhelming. The bright acidity and silky mouthfeel make every cup a pleasure. If you love a coffee that's interesting and nuanced but still totally approachable, this one delivers. Highly recommend.

Delicious tea-like coffee brew
Delicious if into tea-like coffees (this was my first). Tried via pourover as instructed (V60) with a medium grind and got a milder, floral cup that I liked after a couple tries. Also got a more intense, fruity/acidic cup with an aeropress, same temp, ~250g water and ~17g medium/fine grind.

A good flavored coffee once we got the proportions right. A light roast with a nice aroma. Higher than average caffeine content. Taste is full bodied with a nice lingering finish.
