Edwin's high quality coffees have been recognized in international competitions around the world . Outside of farming, Edwin serves as a coffee processing consultant, Q grader, and head judge for the Colombian Cup of Excellence.

Finca Campo Hermoso, located in Circasia, Quindio, Colombia, is a 25- hectare farm known for its exceptional experimental and award winning coffees. Run by Edwin, a fourth generation farmer and coffee innovator with 20 years of experience in coffee production, the commitment to specialty coffee is obvious in the cup.

WHAT'S THE PROCESSING

Carbonic maceration is a fermentation technique borrowed from the wine industry, adapted to coffee processing to create incredibly complex and expressive flavors. Whole coffee cherries are placed in a sealed, oxygen free tank filled with carbon dioxide, encouraging an anaerobic fermentation process. This environment allows unique yeast and bacteria to break down sugars and acids in a controlled way, leading to vibrant, fruit forward, and often intensely aromatic coffees.
