Why This Coffee Stands Out (our first competition lot!)
Ombligon is a rare Arabica varietal native to Huila, Colombia. Its name comes from the Spanish word “ombligo” (belly button), inspired by the bean’s distinctive shape. While its exact origins are unknown, it’s believed to be a natural mutation—possibly related to Ethiopian heirloom varieties.
What makes Ombligon truly special is its vibrant flavor profile: expect intense red fruit notes—like cherry cola, raspberry, and dark chocolate—balanced by a silky body and bright, juicy acidity. Its complexity and sweetness first gained attention at the 2023 World Barista Championship, where barista Jack Simpson used it across multiple beverage courses. More recently, this specific lot from producer Edinson Argote was featured by 2025 U.S. Barista Championship runner-up Isaiah Sheese and 2024 U.S. Brewers Cup 4th place finalist Josh Clements.
Ombligon also offers practical advantages for producers: it’s naturally high-yielding, rust-resistant, and thrives at elevations of 1,600–1,800 m—making it increasingly sought-after in the specialty coffee world.
About Edinson Argote:
Edinson Argote is a passionate and resilient young coffee farmer from Huila, Colombia. Orphaned at just three and raised by his sister, he left home at 11 and later served in the army before discovering his true calling in specialty coffee while cupping beans at a local buying station . He subsequently worked on innovative farms in Cauca, rising to head of quality and processing control, before founding the family-run Quebraditas Coffee Farm with his partner, Luz Angela. There, at elevations between 1,600–1,850 m, he cultivates exotic varieties—including Ombligon—overseeing precision fermentation (thermal shock, yeast inoculation) alongside sustainable soil management practices

Many coffee farmers earn less than their production costs, and value isn’t equally distributed in the coffee value chain. Publishing what we pay won’t fix this imbalance on its own, but it’s an important step toward accountability and a fairer system.

Our light roasts develop their best flavors after 2-3 weeks, peak around 4 weeks, and remain delicious for longer. For extended freshness, consider freezing the coffee to preserve its quality even longer.
