Carbonic maceration is a fermentation technique borrowed from the wine industry, adapted to coffee processing to create incredibly complex and expressive flavors. Whole coffee cherries are placed in a sealed, oxygen free tank filled with carbon dioxide, encouraging an anaerobic fermentation process. This environment allows unique yeast and bacteria to break down sugars and acids in a controlled way, leading to vibrant, fruit forward, and often intensely aromatic coffees.

Price transparency in coffee is vital because the price paid to farmers (based on the NYSE commodity price) often doesn't cover the true cost of production. This makes coffee unsustainable for many farmers.
