Diego Samuel Bermudez, a visionary coffee processor from Piendamó, Cauca, began his coffee journey in 2008, inspired by his familys values of passion and perseverance. In 2015, his farm, Finca El Paraíso, won a regional coffee competition, marking their entry into specialty coffee. Collaborating with his brother and cousin, Diego founded INDESTEC to innovate coffee processing. His meticulous approach, including controlled fermentation techniques using specific microorganisms, has positioned Finca El Paraíso as a leader in Colombian coffee, offering over ten unique profiles. Diego also emphasizes environmental responsibility, focusing on sustainable practices in his region.
WHAT'S THE PROCESSING
Diego Bermudez applies a unique double anaerobic fermentation followed by thermal shock. This method enhances sweetness, highlights vibrant fruit notes, and creates an intensely layered flavor profile. While this coffee is uniquely processed, it technically falls in the more traditional washed coffee profile, yet has an exceptional and distinact fruity, floral flavor profile.
