Carlos has been growing coffee for almost 50 years. Paola spent years as a cupper and green buyer in Nariño and Huila before coming home to the farm in 2022, and since then she has worked alongside her father to refine their fermentations and experiment with new washed and natural processes. The farm grows 13 different cultivars, and Bourbon Ají is one of the rarest of them.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhat makes this coffee stand out\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eAjí is a rare cultivar named for the small, pointed, chili-like shape of its cherries. Grown in Cauca's volcanic soils and cooled by Pacific winds, this washed lot is juicy and layered: ripe blackberry jam and a bright squeeze of lime up front, with honey, plum and green apple filling in as it cools, and a creamy caramel and vanilla sweetness on the finish. It's structured and remarkably well balanced, with a long, sustained finish.
